Here's a very simple way to spice up your chicken without doing a lot of cooking!
Ingredients

For Chicken Skewers:
2 chicken breasts, cut into cubes
1 cup of tandoori paste
juice of 1 lemon
dash of salt
dash of black pepper
For the Salad:
1 cup baby spinach
1 cup arugula
1/3 of a cucumber, chopped
1/2 of an orange pepper, diced
juice of 1/2 of a lemon
Directions:
Preheat oven to 400 degrees.
Toss the chicken in the tandoori paste with salt, pepper, and juice of 1 lemon.
Thread onto skewers and marinate for 20 minutes.
While the chicken is marinating, toss the baby spinach and arugula.
Top with cucumber, orange pepper and lemon juice.
Place skewers on a baking rack and cook for 35 minutes or until chicken is cooked through.
Optional: You can also grill the skewers for 15 minutes on each side.
This is a great on-the-go lunch to get you out of that boring sandwich rut!
